Pumpkin Spice [and everything nice] Loaf

I can’t stop and won’t stop with the pumpkin spice. Baking is one of my favorite things to do with an afternoon and on top of that, I have SUCH a sweet tooth for breads and pastries. You can see my dilemma…To combat my sweet tooth, I am always looking to conjure up a healthy treat!

Recently I stumbled upon coconut flour at HomeGoods for an exceptional price (I seriously recommend getting health foods from HomeGoods/TjMaxx!), so I had to experiment. I’ve baked with almond flour and oat flour, but was pleasantly surprised to find coconut flour to be: high fiber, high protein, high in healthy fats, and very low carb. Not to mention, coconut flour is much more absorbent than any other flour I’ve worked with so 1. proceed with caution if you’re planning to improvise with a recipe and 2. it is that much more cost effective! I really can’t praise coconut flour enough.

Anyways, fall is fast approaching and if you love the smell of the crisp air, cinnamon, and, cloves (oh my), then I highly recommend this au naturale and delectable Pumpkin Spice loaf. This loaf is gluten free and contains no added sweeteners.  It doesn’t even taste gluten free *smirk*

 

Prep time: 10 minutes
Baking time: 30-35 minutes
Total Time: 45 minutes

 

Ingredients: 

  • 2 Tbsp pure maple syrup (optional, but delicious- this just adds another component of Autumn to the loaf)
  • 2 ripe bananas
  • 3 eggs
  • 1 tsp vanilla
  • 1/4 Cup natural peanut butter
  • 1/4 Cup packed coconut flour
  • 1/2 Tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 Tbsp Pumpkin Spice seasoning (Trader Joe’s you’ve done it again)

Directions: 

  1. Preheat oven to 350 degrees and grease, or line a 9×5 bread pan with parchment paper
  2. Combine all the wet ingredients and blend (bananas can be mashed and then all whisked by hand, too)
  3. In a separate bowl, combine dry ingredients
  4. Slowly incorporate wet ingredients into the dry mixture. Coconut flour will take stir time to absorb the wet ingredients
  5. Add ingredients greased or lined bread pan and bake until a toothpick inserted in the middle comes out clean (30-35 minutes)
  6. To keep loaf moist, wrap the bread in aluminum foil immediately out of the oven
